Recipe of the Month by Marilyn Louise Benham!!!!
Home Run Southwestern Salad
You are going to absolutely love this! So yummy. This is an amazing dish and so easy!!! Below is Mom's complete recipe. I had to make some changes as I was making it b/c I wanted to double it and I was feeding little one and did not want it to be to hot for them. This is VERY versatile, I added a can of red beans (only had one can of black), used frozen corn, did not put the tomatoes (Braden and Matthew do not like them), used regular orange juice (Jesse forgot the oranges :)), and had to leave out the cumin (did not have any).
Ingredients:
1 can black beans (not sure if Mom did, but I drained and rinsed mine)
2 Tbl honey (or Agave Necter)
1/2 of an orange sweet pepper chopped
1/2 of a green pepper chopped
handful of fresh cilantro chopped
handfull fresh cilantro chopped
6 small or 4 large fresh corn on the cob scraped off of the cob
2 med size tomatoes chopped
1 clove garlic diced
1/8 of a lg red onion sliced small
1/2 tsp cumin
1/2 tsp chili powder
sprinkle olive oil about 3 Tbl
1/2 orange, squeeze juice into salad
1 Tbl key lime juice
salt and pepper to taste
2 oz can of green chilies, about 1 1/2 chillies chopped
Directions:
Put all ingredients in bowl, mix and store in fridge for about 45 minutes, or leave overnight so that the flavors can meld together.
How easy is that?!
Serve with small cubes of lettuce, crutons, or tortilla chips. It is also good with sour cream, grated cheese, hot sauce, salsa, avacados, flour tortillas... The possibilities are endless! The left-over portions, if there are any LOL, can be put in an omlet, YUM!!!
